I love coconut milk. Buying coconut milk is convenient but can get pricey after a while. I decided to try making my own and I really love it. It is as easy as 123 to make your own! It only takes 4 simple ingredients! Yes, that is it!
Homemade Coconut Milk
1-1/2 to 2 cups unsweetened coconut flakes
4 cups hot water (hot water from the faucet) No need to heat it up.
1/2 to 1 tsp real vanilla (depends on how strong you like yours)
Stevia drops (optional)
Directions: put hot water and coconut flakes in a vita-mix. (You can let it soak for about 2 hours and then blend but I have found that it is not different for me if I soak or do not soak. I have tried both ways. You can try it for yourself and see if you notice a difference. But for me, I liked it both ways. ) Blend for about 2-3 minutes on high.
Then strain it through a cheese cloth or a strainer (one with very small holes). To make sure that you get all the coconut flakes out, use a cheese cloth because it works the best. I did not have any on hand so I used a strainer instead. It still works. I had to run it through a couple times though. I still ended up with some flakes but not bad.
Once you strain all the coconut flakes out, you can use the flakes for a recipe if you want or discard it. I’ve done both. Left over coconut flakes work great for protein ball recipes!!
Add the Vanilla and Stevia drops. Put in a glass jar, store in the refrigerator, and enjoy!
